Rhubarb, strawberry and banana jam
There is something very homely about the process of making jam. You can experiment with your favourite flavours, like this delicious combination of rhubarb, strawberry and banana.
- Place the chopped rhubarb and sugar in a glass bowl and refrigerate for 8 hours or overnight.
- The next day, place the rhubarb mixture in a saucepan and bring to the boil along with the strawberries, lemon juice and mashed banana.
- Boil until the setting stage (approximately 30 minutes) and then pour into sterilised jars. Seal when cold.
Tip! To test if jam is at setting stage, drop a little on a cold saucer and allow it to cool. It should wrinkle on top and stay in place if you run a finger through it.
