Roast salmon with parsley and salad
4 x 180g pieces salmonSalt and freshly ground black pepperolive oil1 cup tightly packed parsley leaves3 spring onions, finely sliced1/2 cup pitted small black olivesRind and juice of 1 lemonSalt and freshly
- Preheat oven to 200 degC. Season 4 x 180g pieces salmon with salt and pepper. Heat frying pan, add a film of oil and brown fish portions for a minute each side.
- Place fish in a shallow baking dish and bake in the oven for between 5 and 8 minutes, depending on the thickness of the salmon.
- Meanwhile, place parsley leaves, finely diced spring onions and pitted small black olives in a bowl and toss well. Scatter with lemon rind and juice of 1 lemon and season with salt and pepper. Drizzle with olive oil and toss well.
- Serve salmon with parsley salad.
