Salmon is a good source of protein and high in those essential omega-3 fatty acids. But the main reason for eating it, is that it tastes amazing!
- Chop the salmon flesh (skin and bones removed) into 2cm pieces.
- Heat the oil with the crushed garlic, seeds removed and finely chopped red chilli, capers and lemon rind of a lemon in a small frying pan. Cook very gently so that the oil is infused with the flavours rather than frying the ingredients.
- Cook the linguine pasta in boiling, salted water until just tender, then drain well.
- Add the salmon to the oil and cook for 2 minutes. Toss the oil and salmon mixture through the drained linguine pasta along with the chopped parsley and serve immediately with lemon wedges.
