Orzo salad with avocado, coriander and lime
Orzo is a rice-shaped pasta, slightly smaller than a pine nut. Frequently used in soups and baked casseroles, this recipe combines avocado, coriander and lime, making this a refreshing, light summer meal.
- Cook orzo in a saucepan of boiling salted water for 8 to 10 minutes or untiljust tender to the bite. Drain, rinse in cold water, then drain well.
- Combine cold orzo with remaining ingredients and toss well. Adjust seasoning with salt and pepper to taste.
