Jellies are light and can make the perfect finish to a meal. Remember however that any jelly recipe needs time to set so prepare this well in advance!
- Chop two-thirds of the brownie into 2cm to 3cm chunks.
- Take six parfait glasses and put a few chunks of brownie in each one. Cover with a scoop of vanilla ice cream. Add a layer of jelly and top with a layer of raspberries.
- Repeat these layers until the parfait glasses are full.
- Top each dessert with a generous dollop of whipped cream, sprinkle with grated chocolate and serve. Instead of the brownie, you can try using chocolate muffin, cake or sponge.
