Chicken with green beans
An easy, affordable and delicious mid-week meal that is quick to whip up! Serve with egg noodles, or use white rice for a gluten-free alternative.
- Heat a little oil in a wok, add garlic and cook for 30 seconds. Add chicken mince and stir-fry for 5 minutes to brown.
- Add chilli, spring onions, beans, lime juice and fish sauce and stir-fry for 3 to 5 minutes until beans are just tender.
- Meanwhile, cook noodles in boiling salted water for 5 minutes until tender, or according to packet instructions.
- Divide noodles between four bowls and top with chicken. Garnish with lime wedges and coriander leaves.
