Mixed prawn, crab and mussel paella
An easy, affordable and delicious mid-week meal.
- Heat oil in a large, high-sided frying pan. Add onion, garlic and celery. Cook, stirring, for 3 to 4 minutes. Add rice and stock and bring to the boil. Cook for 10 minutes. Taste a little and add salt if needed.
- Scrub mussels. Stir rice mixture and add mussels and prawns. Cover and continue to cook over a low heat for 5 to 10 minutes. Discard any mussels that don't open. Stir in crab meat.
- Scatter tomatoes and parsley over paella and serve.
