Toasted club sandwich
Who doesn't love a club sandwich? The ingredients in this sandwich are made especially tasty through toasting the bread.
- Heat oil in a frying pan and cook chicken for 15 minutes until cooked through. Add the bacon rashers to the pan and cook until just crisp. Allow chicken breast and bacon to drain on paper towels, then finely slice the chicken.
- Toast bread (any bakery bread e.g, ciabatta) until golden.
- Place 4 slices of toast on a board and top with bacon and sliced avocado. Drizzle with a little mayonnaise. Cover with sliced tomatoes, chicken, lettuce and remaining mayonnaise. Top with bread.
