- Combine the cabbages (cored and thinly sliced), onion (thinly sliced), and carrot in a large bowl.
- Mix together the mayonnaise with the vinegar. Add the cayenne pepper and herbs. Add to cabbage and toss well to combine.
- Season with salt and pepper. Let it sit for 15 minutes.
- Taste for balance and seasoning.
Cook's tip: The addition of finely sliced celery, apple (with skin on) and other raw vegetables works in this salad. If you don’t have fresh celery, celery seeds make a great addition. If you don’t have orange vinegar, add a squeeze of sweet orange or mandarin juice to your favourite vinegar.
