Poached pears in chocolate sauce
What a rich and decadent way to enjoy pears. Pears are also delicious when poached in sparkling wine or red wine with cinnamon and sugar.
- Place sugar with 2 cups of cold water, vanilla and cinnamon in a saucepan and bring to the boil, stirring to dissolve the sugar.
- Peel pears (firm but ripe), leaving stems attached. Place pears in syrup and gently poach for 20 minutes. Allow to cool to room temperature.
- Place cream, chocolate and cinnamon in a small saucepan and stir over a gentle heat until the sauce is smooth.
- Lift pears from syrup and serve in a puddle of chocolate sauce.
