Your kids will simply love these delicious rice cakes, and can even help you make them!
- Combine chilled cooked rice, eggs, grated cheese, thinly sliced mushrooms, chopped parsley and cooked shredded chicken together in a bowl.
- Season mixture to taste with salt and freshly ground black pepper.
- Form into four patties.
- Heat oil in a frying pan and cook rice cakes until golden and crisp on both sides.
- Serve with a green salad.
