Spaghetti and meatball soup
One of the nicest things about winter is the excuse to eat soup as often as you like. Soup is a lovely way to feel warm from the inside out.
- Place the mince, onion soup mix, tomato paste and oregano in a bowl and mix togethere well. Roll mixture into small balls.
- Heat oil in a large saucepan, add all of the vegetables ( grated carrot, finely sliced stalks celery, finely chopped onion, finely chopped red capsicum, finely chopped garlic) and cook until veges are soft. Add beef stock and bring to the boil. Add the meatballs and simmer for 20 minutes.
- Snap spaghetti into rough thirds and add to the soup for the final 10 minutes of cooking.
- Serve soup topped with grated cheese.
