
Smoked salmon and watercress sandwiches

Whether you're hosting for afternoon tea or an evening soiree, miniature smoked salmon sandwiches are always a hit.
Ingredients
½ cup | Sour cream |
½ cup | Cream cheese |
1 Tbsp | Fresh chives |
1 | Lemon |
16 slices | White sandwich bread |
1 to taste | Salt & freshly ground pepper |
200 g | Smoked salmon |
1 cup | Watercress |
Directions
- Mix together cream cheese (at room temperature), sour cream, chopped chives and 1 tsp finely grated lemon rind in a small bowl. Season to taste.
- Spread the bread slices with a thin layer of mixture and place in a single layer on a bench.
- Cover half the bread slices with smoked salmon and watercress leaves and then cover with the other bread slices.
- Remove crusts from bread and cut into quarters.

Watercress can be found in some supermarkets, speciality food stores, selected green grocers or try your local farmer's market. Good luck!
