Pork and prune hotpot
There is something comforting in having dinner bubbling away in the oven with flavours working together to make for a delicious meal later. This hotpot is a classic slow cooker recipe.
- Preheat oven to 150C. Heat oil in heavy-bottomed fry pan and brown pork (cut into 4cm cubes) in batches. Set aside.
- Cook chopped bacon, onions and garlic until tender. Add mushrooms and cook for a further minute.
- Transfer to a heavy-bottomed casserole dish.
- Add remaining ingredients and bring to the boil. Cook covered in oven for 1½ hours until the pork is cooked through and very tender. Alternatively, you can cook this in a slow cooker on high for 3 to 4 hours or low for 6 to 7 hours.
