Salmon and potato salad
For salmon lovers, this is a quick and easy dish which makes an ideal lunch or light dinner.
- Cook small new potatoes in boiling, salted water until tender (about 10 to 15 minutes). In a separate pan, boil florets from the head broccoli for 3 minutes, drain well, and refresh under a cold tap, drain again.
- In a large bowl, whisk together lemon zest and juice of 1 and 1/2 lemon, oil and wholegrain mustard, then season. Stir in thinly sliced red onion and leave for 10 minutes. Add potatoes, broccoli and flaked hot smoked salmon. Mix well and serve, scattered with chopped chives.
