Dulce de leche
Dulce de leche is a great way to liven up fresh fruit - keep the milk just under boil to ensure faster cooking.
- Place the milk in a saucepan and bring to the boil, then remove from heat. Add sugar, vanilla and baking soda. Stir until sugar is dissolved.
- Return the pan to the heat and cook on a moderate simmer for 1¼ hours, stirring at times, until the mixture is golden.
- Serve dulce de leche with fresh fruit, with churros or in small bowls.
