Dinner in a soup bowl
A quick trip to the supermarket will bring you to a vast array of chilled soups, often at good prices. Buy when on special and always have a couple in the freezer for this great dinner idea.
- Heat the soup in a pot and add all the other ingredients, except the cheese and parsley.
- Place in bowl and top with parmesan cheese and chopped parsley. Adjust with seasoning.
- If you enjoy extra heat, add a little fresh chilli on top.
Cook's tip: You don’t need to add salt – most of these commercial soups already have a good dose of it. If you don’t have parsley in the garden, use fresh mint. You could even add leftover roast meat or drained canned tuna and serve it on a bed of rice as an amazing last-minute dinner option. Adding a packet of microwave rice could also help bulk up this meal.
