Banana and white chocolate pudding
A delicious dessert that uses up the overripe bananas in your fruitbowl.
|125 g||Butter, softened|
|1 tsp||Baking soda|
|½ cup||Water, boiling|
|1 cup||Banana, mashed (2-3 bananas)|
|1 cup||Self raising flour|
|¾ cup||White chocolate, bits|
- Preheat oven to 180C. Mix softened butter and sugar together in a bowl until the mixture is pale and creamy. Add eggs one at a time beating well after each addition.
- Dissolve baking soda in boiling water and add along with the bananas and flour. Gently mix to combine and stir through the chocolate bits. Pour mix into a greased 28cm baking dish and bake for 35 minutes until golden and springy to the touch.
- Place brown sugar, butter, cream and vanilla in a small saucepan and bring to the boil, stirring to dissolve the sugar.
- Serve the pudding with sauce and a scoop of vanilla ice cream.
