Baked salmon with dill honey and mustard sauce
This impressive dish can be served warm or at room temperature. It is a fantastic way to elegantly feed a large group of people.
|½ cup||Sour cream|
|2 Tbsp||Dijon mustard|
|2 Tbsp||Dill, chopped|
|2 Tbsp||Parsley, chopped|
|2 tsp||Lemon juice|
|1 to taste||Salt & freshly ground pepper|
- Mix mayonnaise, sour cream, mustard, dill, parsley, honey, lemon and salt and pepper to taste in a bowl. Cover and refrigerate until needed.
- Preheat oven to 20C.
- Remove pin bones and place salmon in a roasting dish. Pour over combined oil and lemon juice and season with salt and pepper.
- Cook the side of salmon for 10 minutes, then remove from the oven. Just before serving brush with melted butter and place under the grill for 2 to 3 minutes.
- Serve salmon with dill honey mustard sauce and vegetables or salad.
