Chocolate mud cake
Great for a birthday celebration, this chocolate mud cake is a real favourite.
Also suitable for a wedding. After the cake is officially cut, it can be served as dessert with fresh berries.
|2¼ cups||Caster sugar|
|½ cup||Cocoa powder|
|2 tsp||Baking powder|
|1 cup||Orange juice|
|1 tsp||Baking soda|
|½ cup||Water, hot|
White chocolate frosting
- Preheat oven to 180 degC. Beat the butter and sugar together until light and fluffy. Add eggs one a time and mix well after each. Add sifted flour, baking powder, cocoa and mix lightly together.
- Fold in orange juice. Lastly add baking soda which has been dissolved in hot water. Pour mixture into a well-greased 24 to 26cm cake tin. Bake for about 45 to 60 minutes until cake is cooked. Allow cake to cool until cold.
- To make the frosting, beat butter and icing sugar with an electric mixer until pale and fluffy. oelt the white chocolate and cream together carefully and beat well to remove all lumps. Cool slightly. Pour the cooled chocolate cream into the butter mixture and continue to mix with a mixer for 5 to 10 minutes.
- Split cake into 3 and sandwich together with white chocolate frosting. Assemble layers and spread remaining frosting over the cake. Decorate as desired.
Tip! Cake can be made up to four days in advance but wrap well with plastic clingfilm to prevent it from drying out.
