Mini caesar salads in crispy cases
To save time, bread cases can be prepared a day in advance and stored in an airtight container.
- Preheat oven to 180 degC. Cut crusts from bread and roll slices with a rolling pin to flatten. Brush or spray with olive oil, then gently press them into mini muffin pans.
- Bake bread cases for 5 to 10 minutes until crisp and just golden. Cool on a wire rack.
- Fill each case with lettuce, then scatter with bacon. Quarter eggs and divide amongst bread cases. Drizzle with dressing and top with shaved parmesan.
