This delicious lamb dish is sure to be a family favourite - remember to allow marinating time.
- Place the lamb in a shallow dish and sprinkle over rosemary, dried oregano, lemon rind(grated), juice, garlic and oil. Season with pepper.
- Refrigerate overnight if possible. Remove the lamb from the fridge at least 1 hour prior to cooking.
- Lift lamb from the marinade, season with salt and cook on a hot barbecue for 15 minutes each side or longer if you like.
- Rest for 10 minutes prior to serving.
