These kebabs are a great party food. Simply serve with cocktails for a great evening!
- Place 12 bamboo skewers in water to soak. Mix together olive oil, crushed and finely chopped garlic, finely grated lemon rind, deseeded and finely chopped red chilli and sea salt. Place prawns and scallops in a shallow bowl and pour over the oil mixture. Refrigerate for 1 hour.
- Thread a piece of bacon onto a skewer followed by a prawn, scallop, bacon, prawn and then bacon. Continue with remaining skewers until you have used up ingredients and skewers.
- Cook kebabs for 1 to 2 minutes each side on a hot barbecue or griddle.
