Apricot Chicken Drumsticks

Chicken and apricot together is a classic combination. These drumsticks can be served as finger food or a hearty meal with a salad on the side.
- Preheat oven to 180C. Heat 1 tablespoon of oil in a frying pan and gently cook onion until tender. Combine onion, macadamias, apricots, sage, breadcrumbs, salt and pepper in a bowl, then add sour cream.
- Pull skin back from drumsticks and carefully push stuffing between skin and flesh. Cover stuffing with skin and secure in place with a toothpick.
- Rub chicken with oil; season with salt. Place in a roasting dish and cook for 45 minutes until golden and cooked through.
