Great on a cooler night, serve on its own or as a side to a meat main.
- Preheat oven to 180C.
- Heat a frying pan over a medium heat, add lamb mince, finely chopped onion, crushed garlic, all the spices, freshly chopped parsley and coriander and cook for 5 minutes until meat has browned and moisture has evaporated.
- Add lightly toasted pine nuts, rice and egg, and cook, stirring for a minute.
- Halve capsicums and remove seeds. Stuff with filling and sprinkle with cheese. Place in a baking dish and cook for 20 minutes.
