Lime & coconut panna cotta
Start this dessert the day before and let it set overnight. Preparation: 15min plus overnight to set.
- Place the cream, coconut cream, vanilla (split open), sugar, lime juice and rind from one lime, in a saucepan and heat until almost boiling, stirring to dissolve the sugar.
- Place the gelatine in a small bowl with 1 tablespoon of water. Sit the bowl inside a larger bowl of boiling water. Allow to sit for several minutes until liquid, then stir until smooth. Pour gelatine into the hot cream and mix well.
- Pour the mixture into 4 lightly oiled ramekins. Chill overnight.
- Run a hot knife around the outside of the panna cotta, then invert onto plates.
