Lamb and tomato flat bread
You can make this dish using our fabulous pizza dough recipe in the food section. Preparation: 15min. Cooking: 25min. Serves: 4
|2 Tbsp||Olive oil|
|1||Red onion, finely chopped|
|400 g||Lamb mince|
|1||Green capsicum, finely chopped|
|2 cloves||Garlic, finely chopped|
|1 tsp||Ground coriander|
|1 tsp||Ground cumin|
|1||Salt & freshly ground pepper, to season|
|1 Tbsp||Tomato paste|
|1||Pizza base, large, thin|
|¼ cup||Extra virgin olive oil|
|½ cup||Parsley, chopped|
- Preheat oven to 210C. Heat oil in a frying pan and cook the mince until well coloured. Reduce the heat slightly and add the red onion, capsicum, garlic, cumin, coriander, cinnamon and salt. Cook, stirring until onion is just tender.
- Smear tomato paste over pizza base and top with mince.
- Drizzle with a little of the olive oil, then cook for 10 to 12 minutes until dough is golden and firm.
- Remove from the oven and allow to cool for a couple of minutes, then top with tomato and parsley. Drizzle with a little extra olive oil and sprinkle with salt and pepper.
