Rhubarb rose syrup

Mix this syrup with soda water to make a refreshing sparkling drink.

Ingredients

750 g Rhubarb, roughly chopped
1½ cups Sugar
1 Lemon, zested
3 cups Water, cold
⅓ cup Lemon juice, or to taste
3 tsp Rosewater

Directions

  1. Place rhubarb, sugar and finely grated lemon rind in a saucepan with the water. Bring to the boil and then simmer for 15 minutes. Allow to cool completely.
  2. Strain syrup into a jug and add lemon juice and rosewater to taste.
  3. Transfer syrup into a bottle, seal and store in the fridge. Dilute syrup to serve.
