Date and walnut cake
Serve this cake with yoghurt, honey and chopped walnuts.
- Preheat oven to 160 degC and grease and line a 20cm round cake tin. Beat butter and sugar until light and fluffy. Add eggs, one at a time. Beat well after each.
- Gently mix in flour and cinnamon and then the milk, vanilla, dates and walnuts.
- Spoon batter into the cake tin and smooth the surface. Bake for 45 minutes or until a skewer inserted into the centre of the cake comes out clean.
- Allow to cool in the tin for 5 minutes, then turn out onto wire rack to cool completely. Dust with icing sugar.
