Date and apricot chutney

Homemade chutney makes a great gift. Make your own labels and jar covers and give these away as presents.

Ingredients

250 g Dried apricots
250 g Dates, pitted and dried
2 Tbsp Ginger, grated, fresh
1 clove Garlic, finely chopped
1 cup Light muscovado sugar, packed
1½ cups Raisins
2¼ cups White wine vinegar

Directions

  1. Place the apricots and dried dates in a large bowl and cover with cold water. Soak overnight. Drain well and then place in a large saucepan.
  2. Add the ginger, garlic, sugar, raisins and vinegar. Bring to the boil, stirring frequently to dissolve sugar. Reduce the heat and simmer for 1 to 1.5 hours until the mixture is thick.
  3. Pour into warm, sterilised jars and seal.

Cook's tips: Serve chutney with cold meats, sausages, bread or simply with cheese and crackers.
