Fragrant winter compote
Serve with waffles, toasted muesli or porridge. Ready in 35mins, plus time to chill
- Combine the rhubarb (cut into 1cm pieces), apple (peeled, cored and cut into 1cm pieces), pears (cut into pieces), sugar and spices in a large heavy-based saucepan.
- Place the pan on the heat and bring the mixture to a boil over a medium heat, stirring constantly. Reduce the heat to low, cover and simmer, stirring now and then until the fruit is tender. About 10 minutes.
- Remove from the heat and leave to cool without stirring. Refrigerate the day before you plan to use it.
