Doorstep toasted sandwiches
For breakfast or lunch these toasted sandwiches are sure to fill the gap. Homemade meatloaf is splendid as a filling but ham is also tasty. Add your favourite chutney or an onion for variation. For ease of cooking, it's best to have two frying pans set up at the same time so there is less waiting time.
- Heat oil in a small frying pan. Cook mushrooms and parsley for about 3 minutes or until soft.
- Butter the bread and lie one slice of bread butter-side down in a large frying pan. Top with the meatloaf or ham, a quarter of the mushrooms and a quarter of the cheese. Top with another slice of bread, butter-side upwards.
- Cook the first side over a low heat for about 6 minutes. When the cheese begins to melt, use a spatula to flip the sandwich over and cook the second side for a further 5 minutes. Repeat with the remaining slices of bread. Serve immediately.
