Mexican bean stew
This tasty take on Mexican food is a great meal for the whole family to share.
- Heat oil in a large saucepan, add finely chopped onion plus finely chopped red and green capsicums, then stir-fry for 5 minutes to soften. Add canned tomatoes and simmer for 5 minutes.
- Add drained kidney beans, corn kernels and deseeded chilli, then simmer for 5 minutes more. Season with salt and pepper to taste.
- Serve topped with coriander or parsley, and with sour cream and warmed flour or corn tortillas on the side.
