Thinly sliced fresh vegetables are delicious dipped into this light batter. Try eggplant, courgette, fennel bulb and cavolo nero.
- Place self-raising flour and salt in a bowl. Whisk in the egg, lime zest, a little pepper and the cold, fizzy water, enough to make a thin batter.
- Dip thinly sliced chunks of fresh vegetables (eggplant, courgette, fennel bulb, cavolo nero, etc.) into the batter and fry in clean, hot vegetable oil until crispy. Drain on paper towels, sprinkle with sea salt and serve with a squeeze of fresh lime and a dipping sauce.
