- Heat a little olive oil and a knob of butter in a non-stick frying pan. Add similar-sized chunks of cooked potatoes and black pudding, and fry to colour and heat through.
- Pile on to warm tortillas, add chunks of avocado or tomato, grated soft boiled egg, a little parsley and capers and dress with a drizzle of aioli or hot sauce.
