Directions

  1. Slice ripe peaches, plums, nectarines and apricots into a large bowl. Add a splash of liquor (gin or light rum), a good sprinkling of icing sugar, a little freshly grated ginger and the zest and juice of ½ a lemon or orange and toss to combine. Cover and leave for about an hour to macerate and get all juicy.
  2. Add a little thinly sliced mint and serve as a simple topping for icecream and desserts. You can also blitz it into a coulis and chill to serve similarly, or freeze the mixture to make smoothies or fruit cocktails.
