Camembert and salted caramel crostini

The combination of cheese, fruit and nuts has been a winner for centuries. Add in a little salted caramel crunch and the experience will really get the party started. Any type of cheese, fruits and nuts may be used — I particularly like dried fruit and soft cheese. If you are pushed for time to make crostini, serve on crackers.
- Place the sugar, salt and water into a small saucepan, bring to the boil, cook until sugar begins to turn a light caramel. Pour onto a sheet of greaseproof paper. Once cold and set, crack into pieces then chop with a knife until fine.
- For the crostini, brush bread slices with oil, lay on a baking tray and cook for 5-7 minutes at 180C until crisp and golden.
- Arrange a slice of fig, a slice of camembert and a nut on to each crostini. Spoon on the salted caramel to finish.
