Gnocchi with wilted greens

Making fresh gnocchi is so rewarding but buying a good quality packet version for this recipe is fine. Simply toss it into a fresh mix of vegetables and blue cheese for a creamy hit.
|1 Tbsp||Olive oil|
|2||Spring onions, sliced|
|2||Garlic cloves, crushed|
|2 rashers||Streaky bacon, chopped|
|½||Red pepper, sliced thinly|
|1 cup||Green vegetable, sliced thinly|
|2 cups||Kale, shredded|
|¼ cup||Sage, leaves only, shredded|
|100 g||Blue cheese, crumbled|
|200 g||Potato gnocchi, store-bought, cooked|
- Heat the oil and butter in a frying pan. Add the spring onions, garlic, bacon, red pepper and green vegetables, cooking for 3 or 4 minutes until softened. Add the kale and sage leaves, allowing to wilt for 2 minutes.
- Toss through the blue cheese and gnocchi to heat through.
- Serve hot with extra sage leaves to garnish.
