Ramen with egg
( SERVES 1 )
An easy lunch or light meal. Serve with chilli paste.
- Bring the water to the boil in a medium saucepan. Add the noodles and cook for 1 minute. Add the soy sauce, ginger and sugar and simmer for another 2 minutes.
- Add the vegetables and poach for 1 minute, until softened. Pour into a heatproof bowl.
- Break the egg onto the top and spoon a little of the hot stock over the egg. If it doesn’t set quickly, pop it into the microwave for 30 seconds on high.
