|1 punnet||Cherry tomatoes|
|1||Finely chopped spring onion, use 2 if you like|
|1 splash||Extra virgin olive oil|
|1 splash||Red wine vinegar|
|1||Lemon, zest and juice, use as much as liked to season|
|2||Abe's Bagels, use Natural or Super Sesame, halved|
|1 whole||Fresh mozzarella, sliced|
|1 handful||Micro herbs, or fresh chervil or parsley|
|1 drizzle||Basil oil|
- Preheat oven to 200C. Toss cherry tomatoes and spring onion with a splash of olive oil and red wine vinegar. Roast until they blister.
- Remove, season with sea salt flakes, freshly ground pepper and lemon zest and juice to taste. Split, lightly toast and butter 2 bagels. Top with slices of fresh mozzarella, the cherry tomatoes, some micro greens or fresh chervil or parsley, and drizzle with a little basil oil to serve.
