Spicy prawn skewers with herby slaw

Prawn kebabs on slaw is a very easy and healthy dinner. You could serve them with soft tacos and a couple of other salads for a larger meal.
|½||Red cabbage, thinly sliced|
|1 large bunch||Mint, roughly chopped|
|1 large bunch||Parsley, roughly chopped|
|1 large bunch||Coriander, roughly chopped|
|2 Tbsp||Roughly chopped nuts, of your choice|
|2 Tbsp||Seeds, of your choice|
|½ cup||Natural yoghurt|
|2 Tbsp||Rice wine vinegar, or other vinegar|
|1 Tbsp||Sesame oil|
|1 pinch||Chilli flakes|
|1||Lime, juice only, or the juice of 1 lemon|
|1 pinch||Sea salt and cracked black pepper|
|1 pinch||Smoked paprika|
To make the slaw
Add all ingredients to a bowl, then toss in the dressing.
To make the dressing
Whisk all ingredients together in a small bowl until emulsified. Taste and adjust as necessary.
To make the skewers
- Place 4 prawns on each skewer
- Mix together the harissa, lemon, olive oil and finely chopped spring onion.
- Spread or brush the harissa mixture on to the prawns. Fry on a barbecue or in a frying pan heated to medium-high heat.
- Serve immediately on the slaw.
