Ham and egg penne

This kid-friendly pasta can easily made by the kids themselves. Blanched vegetables, such as peas, beans and corn kernels, could be added to the eggs and cream. 

Ingredients

1 pinch Salt
250 g Penne pasta, dried, about 2 cups
150 g Ham, thickly sliced, lean
2 tsp Olive oil
2 Eggs
¾ cup Light cream, or evaporated milk
75 g Tasty cheese, about 1 cup, very finely grated
3 Tbsp Chopped chives

Directions

  1. Bring a large saucepan of water to the boil. Add the salt. Slowly add the pasta. Boil until just tender. Drain through a sieve and return to the saucepan.
  2. Meanwhile, cut the ham into chunks. Heat the oil in a small frying pan. Add the ham and sauté, until browned.
  3. Place the eggs and cream or milk in a bowl and whisk until well combined. Add ⅔ of the cheese. 
  4. Place the pan of drained pasta on low heat. Add the egg mixture and ham. Toss to combine. Cook for 2-3 minutes or until heated through. Season with pepper. Serve topped with the chives and remaining cheese.
