This strong and tart cocktail is a great start to an evening.
For the cocktail
|2 scoops||Ice cubes|
|2 small||Lemons, juiced|
|4 Tbsp||Sugar syrup, rosemary infused (recipe below)|
|2 sprigs||Rosemary, to garnish|
|2 servings||Soda water, to top up the glass|
Rosemary sugar syrup
To make the rosemary sugar syrup
- Combine all ingredients in a small saucepan and gently heat until the sugar is dissolved. Allow to cool, then remove the rosemary sprigs before using. Will keep in the fridge for a couple of weeks.
To make the cocktail
- Take two small glasses and fill with ice.
- Add gin, lemon juice and 4 tablespoons of rosemary syrup. Stir in the glass to combine.
- Add a splash of soda water and garnish with a sprig of rosemary.
