Roasted peach and goat's cheese crostini
( SERVES 4 )
- Heat the oil and butter in a heavy frying pan. Pan-fry the peaches on medium-low heat, cut-side down, for 5 minutes.
- Add the maple syrup and lemon juice and continue cooking until soft, turning occasionally. Season.
- Spread the crostini with goat’s cheese and top with the warm peaches and juices.
