Grilled nectarines with pistachio mascarpone

- Heat the grill. Halve the nectarines and remove the stones, then place on the grill.
- Sprinkle with the brown sugar, then dot with butter (softened) and mascarpone. Grill for 3 minutes then turn over, squeeze over the lemon and continue to cook for another couple of minutes or until tender.
- Finely chop the pistachios and toast for 2 minutes. Sprinkle over the nectarines before serving with the extra mascarpone.
