Microwave tomato relish
( MAKES about 4 cups )

- Place the onion in a large, microwave-proof bowl or casserole. Cover and cook on high power for 3 minutes.
- Stir in the remaining ingredients. Cook, uncovered, for about 30 minutes, stirring occasionally. The mixture should be slightly thickened. Pour into hot sterilised jars and seal.
