Beef Medallions with Rocket and Parmesan
( SERVES 2 )
Rub the beef medallions in oil and season to taste. Pan-fry the meat for 2½-3 minutes each side (medium-rare). Transfer to a plate, cover and rest for 5 minutes.
Toss the rocket leaves in the remaining olive oil and the vinegar. Place on a long platter.
Slice the medallions and sit on top of the rocket.
Scatter the Parmesan over and serve immediately.
