Chargrilled chicken and mozzarella burger
|2||Chicken breasts, trimmed and halved lengthways|
|2 Tbsp||Olive oil|
|1 Tbsp||Lemon juice|
|1 to taste||Flaky Marlborough sea salt|
|4||Burger buns, halved|
|1 to brush||Olive oil, on buns|
|1 to serve||Whole egg mayonnaise|
|250 g||Buffalo mozzarella, sliced|
|1 to serve||Pesto|
|1 to serve||Shaved parmesan|
|1 to serve||Mixed salad leaves|
- Place the chicken, oil, lemon juice, salt and pepper in a non-metallic dish and toss to coat. Set aside for 5 minutes to marinate.
- Brush the bun halves with oil and place on a baking tray. Grill under a preheated hot grill for 1 minute or until golden. Set aside.
- Heat a chargrill pan or barbecue to high heat. Chargrill or barbecue the chicken for 2 minutes each side or until cooked through.
- Slice the chicken. Spread the bun halves with mayonnaise and top with chicken, mozzarella, pesto, parmesan and salad leaves to serve
