
Fig, walnut and parmesan salad
( SERVES 4 )

Try this simple Greek salad with a tasty combination
Dressing
¼ cup | Olive oil |
2 Tbsp | Runny honey |
2 Tbsp | Wine vinegar |
Salad
5 handfuls | Mixed salad leaves |
8 | Dried figs, sliced |
1 cup | Walnuts, toasted and roughly chopped |
½ cup | Shaved parmesan |
Directions
- To make the dressing combine the oil, honey and vinegar in a jar and shake well.
- Place the lettuce on to a platter. Sprinkle over the figs, walnuts, parmesan, salt and pepper.
- Just before serving pour over the dressing and serve.
