Chilli con carne nachos

- Make a quick guacamole by smashing 1 avocado with 1 clove garlic crushed with 1 tsp sea salt, the zest and juice of a lime or lemon, 1 small finely chopped green chilli and a grind of black pepper.
- Pile corn chips on to baking paper on an oven tray, smother with reheated chilli con carne (try this chorizo sausage chilli con carne or use your favourite savoury mince recipe adding a can of red kidney beans, lots of fresh coriander, a little fresh chilli and some lemon zest in to the mix), top with finely grated parmesan and cheddar cheese and bake until melty and golden.
- To serve, garnish with dollops of guacamole, coriander leaves and a grind of black pepper.
To make corn chips at home: Cut corn tortillas or flat breads into triangles (you can also use flour tortillas), toss with a little olive oil, sea salt flakes and ground black pepper and bake in a hot oven until just coloured.
